serrano chili & lime oyster dressing

This oyster dressing, with a bit of a kick from the serrano chili, is a fresh take on a classic mignonette and pairs perfectly with life’s most slurpable moments.

Ingredients

  • 2 Scallions/Green Onions

  • 1 clove Garlic 

  • 1 Serrano Chili (or small Jalapeno) 

  • 3-4 limes, depending on juice content, juiced 

  • 1 tablespoon Extra Virgin Olive Oil 

Method

  1. Start by cutting the Serrano in half lengthwise and remove the seeds and white flesh with a spoon. If you like a bit of heat, leave a few seeds and white flesh. Mince the cleaned pepper with and the garlic and add to a small mixing bowl with the lime juice and Extra Virgin Olive Oil. Thinly slice the scallions, whites and greens, and add them to the bowl. Stir to combine and dress each raw oyster with a spoonful.
